Where it all started…

Bethan Trevett has spent most of her working life in the hospitality industry… it is in her blood. She grew up in pubs that her parents ran and went on to work in nightclubs, hotel bars, cocktail bars and restaurants.

The idea of The Wonder Bar came to life when Beth ran her first bar for 500 guests at an event on New Year’s Eve in 2016. Beth had never created a bar from scratch before but she jumped at the chance and loved it so much, she decided that is what she wanted to do … create a pop-up bar service around Wales, the South West and beyond.

Since then, Beth has run bars at a whole host of different events, including corporate events, weddings and private festivals. The focus is on serving local products, foraging for ingredients to make delicious cocktails and providing a fun, friendly & professional event.

The Wonder Bar also branched out into doing Cocktail Workshops in 2017 and now host a whole range of different themed events too.


Their pledge to sustainability

Beth is passionate about her impact on the planet and wants to use The Wonder Bar to make positive changes in the world. From their bars they manage waste responsibly and recycle as much as possible, they limit single use plastic as much as possible and use biodegradable or reusable packaging for their products.

Many of their cocktail making products are sourced from local brewers and distillers. Some of their regular suppliers include the Wye Valley Brewery based in Hereforshire, aswell as the Dyfi Distillery, who are award winning gin distillers based in Mid Wales.

Since they also offer bespoke services suited to each individual event, they can support sustainable food systems via implementation of intelligent menu design. This means they frequently utilise seasonal produce within their cocktails, foraged within 20 miles of where they are located or sourced from local markets. Beth is also a keen gardener and grows a lot of her own herbs and fruit (as well as plenty of flowers for the bees) in her garden at home.

Making a positive change to the hospitality industry

With a passion for the hospitality industry, Beth also wants the Wonder Bar to change the way the hospitality industry works and for bar work to be a progressive career, not something you do until you get a “real job”!

Beth wants to not only inspire but also empower people to work in the hospitality industry and is committed to providing an amazing experience for her customers but also her team aswell. Beth ensures everyone gets paid the same regardless of age and is on her way to being a ‘Living Wage Employer.’

Supporting the local community

And if that all wasn’t enough Beth is also in the process of launching ‘Keep the Change CIC’.

Keep the Change will be a Community Interest Company providing on-the-job training to those furthest from the labour market. It will be a lounge bar with a cool vibe and social justice at it’s core … championing hospitality and changing attitudes.

Fundraising for this project is well under way with a series of pop-up restaurants being held over the next few months.
